Xanthan Gum is a plant-based thickening and stabilizing agent. It is named for the bacteria, Xanthomonas campestris, which plays a crucial role in this description. Technically speaking, xanthan gum is a polysaccharide, which is just a fancy way to say “a string of multiple sugars.” To create xanthan gum, the Xanthomonas campestris bacterium is allowed to ferment on a sugar. The result is a gel that is then dried and milled to create the powder substance.

Xanthan gum has a number of powerful properties. First, it works as an emulsifier, encouraging liquids that normally don’t like one another to mix together. Second, it works as thickener, increasing the viscosity of liquids and batters. Third, it can create a creamy texture.

Taste: 8/10. Tastes just like it sounds. Sweet, maple flavor that goes perfectly with pancakes. I use this all the time on prep when I need to save the macros for other carbs. If you’re not used to sugar-free flavored foods, then you may notice a bit of a difference in taste compared to traditional maple syrup. It’s not as sticky sweet as you’d be used to. But, for no calories, this is absolutely worth trying!

Flavor Accuracy: 8/10. There is a hint of an artificial flavor to this. Like I mentioned above, if you’re not used to the taste of sweeteners, then you may be pick up on that. Just keepin’ it real. As for this girl – I can’t tell the difference! I actually prefer this over regular syrup now.

Texture: 7/10. Not as runny and thin as most maple syrups but it gets the job done.
